Sample Menus

All entrees and side dishes are made with fresh ingredients. To Your Table offers flexibility to the recipes. Substitutions can be made and changes, such as making a low-fat version of a recipe, can also be done. To Your Table offers other menus as well. There is a Low-Fat Menu and a Low-Sugar Menu. Below are some of the entrees from one of my Fall/Winter Menus.

  • Chicken and Rice with Caramelized Onions
    Chicken thighs, rice and sweet onions come together when this dish bakes in the oven.
  • Chicken Mole, served with Mexican Rice
    A traditional Mexican dish, chicken breasts in a rich tomato sauce seasoned with chile and cocoa powders.
  • Cranberry Chicken, served with White Rice
    A sweet and sour sauce covers the chicken breasts.
  • Apple-Bacon Stuffed Chicken Breasts, served with Bacon-Butter Carrots
    Breast halves stuffed and served with an apple-pecan sauce.
  • Tandori Chicken, served with Seasoned Lentils
    This dish has all the vibrant flavors of this traditional Indian dish.
  • Beef Bourguignon, served with Egg Noodles
    A hearty beef stew with a rich red wine sauce.
  • Yankee Pot Roast
    Chuck roast, carrots and potatoes in a rich beefy sauce.
  • Beef and Broccoli Stir-fry, served with Asian Rice Pilaf
    A spicy stir-fry made with flank steak.
  • Rosemary-Merlot Flank Steak, served with Roasted New Potatoes
    Thin slices of flank steak are served in a Merlot sauce.
  • Salmon with Orange-Fennel Sauce, served with Rice Pilaf
    Fresh orange juice counters the richness of the salmon in this satisfying dish.
  • Alaska Halibut Royale, served with Rice Pilaf
    A sour cream and mayonnaise sauce covers this breaded halibut baked in the oven
  • Tuna with Green-Peppercorn Sauce, served with Ginger-Glazed Carrots
    Tuna is topped with a flavorful sauce.
  • Pork Chops with a Cider Glaze served with Autumn Vegetable Gratin
    The pork chops go well with this sweet and tangy sauce.
  • Greek Pork Chops served with Rice Pilaf
    Lemon and herbs gives these chops their Greek flavor.
  • Roast Pork with Mushroom Sauce, served with Fettuccini
    Pork loin in a white wine mushroom sauce.
  • Rice and Feta Stuffed Baby Eggplant
    Eggplant is stuffed with basmati rice and feta cheese topped with a chopped tomato sauce.
  • Cajun Chicken Fettuccini
    Spicy chicken pieces are enhanced in a light yet creamy sauce.
  • Low-fat Macaroni & Cheese
    A traditional dish with less fat but a lot of flavor.
  • Smoky Tomato-Lentil Soup with Ham
    Seasoned with ham and a blend of herbs.
  • Albondigas (Mexican Meatball Soup)
    A non-spicy soup with meatballs and rice.
  • Broccoli and Red Pepper Chowder
    Broccoli, bell pepper, and cheddar cheese come together in this satisfying soup.
